Made For Two Applesauce
I had a late night craving for some applesauce last night and decided to try a healthier version of the one I have been trying. So I substituted organic coconut sugar in the place of white sugar. I have been using coconut sugar for a substitute for things lately and have absolutely fallen in love with the benefits of the naturally occurring nutrients it adds to your sweet tooth such as magnesium, potassium, B vitamins and more. This is also a good substitute for those who are diabetic. Also, applesauce and cinnamon are not only a nice treat but are both good to aid in digestion, especially if you have an upset tummy.
This recipe is for 2 servings-perfect amount to share with someone special!
2 apples of your choice (I prefer the ambrosia apples)
1/3 Cup water
2 Tbsp coconut sugar (white sugar if you prefer)
1/4 Tsp ground cinnamon
*Peel 2 apples and cut into 1/2 inch size pieces.
Put apple pieces into a medium size sauce pan with water and cinnamon.
Cover and cook over medium heat for 15-20 mins or until apples are soft.
Remove from heat and mash with a potato masher.
Enjoy right out of the pan with two spoons or try it warm over a scoop of vanilla ice cream!
*I am currently working on a recipe for some apple crisps chips with the apple peels but for now I just eat them as I wait on the applesauce to finish. Apple peels are loaded with good nutrients with the added bonus of fiber.
